FOR GREEN BALLS YOU WILL NEED:
| 2 pkgs. chopped spinach
2 c. stuffing mix (crumb type) 3/4 cup melted butter (Ok not that healthy but what about all that green hmmnn?) 1/2 tsp. thyme 1 tsp. garlic salt 1/2 tsp. pepper 6 eggs 1 1/2 lg. onion, chopped fine 1/2 c. Parmesan cheese Cook spinach and drain really really well. Add other ingredients and mix really really well as well. Shape into balls. Bake at 375 degrees for 20 minutes. These freeze really really well; actually it’s better to bake them just a little to hold the shape before freezing; then finish when ready to use. NOTE: If the mixture appears too runny to form into balls, wait a few minutes for the liquid to be absorbed; if necessary you can add more crumbs.
